Chicken Fajitas

Yay, fajitas! So easy to make, and so quick. A little bit of back story. The word "fajita" means "little belt" from "faja" for strip or belt, and the diminutive "ita". It describes a skirt steak, and fajitas were traditionally made with grilled skirt steak, though now they can be made with chicken, shrimp, you name it. The method is to quickly sear the meat on a griddle or grill, slice and serve with quickly seared peppers and onions and flour tortillas.

Pesto Stuffed Zucchini

You know what happens when you go on vacation, even for a few days, and you have zucchini growing in your garden? Even when it's only for four days and you've picked every visible zucchini you can right before you leave? Bats, that's what. Baseball bats. Humungous baseball bat-sized zucchini that you can't imagine could have grown in just four days. Let alone three of them. What the heck? Where did these come from? Obviously you're blind, you tell yourself, they must have been hiding under a leaf. Lots of leaves. Whatever. Now you have them, so what to do? Zucchini bread and zucchini cake are obvious choices, and you can also scoop out some of the insides of these mongo zucchinis, stuff the zucchini shells, and bake them. Which is exactly what we've done here.

Barbecued Pork Shoulder on a Gas Grill

Barbecue. There is nothing better than a good pork shoulder roasted "low and slow" as they say, over wood smoke. The long cooking time and low temperature ensure a succulent roast. And the smoke? Well the smoke is the whole point of barbecuing in the first place, otherwise you could just as easily use a slow cooker.

The thing is, to do this right, you really need a smoker, or a barbecue with a separate box for wood chips. I don't have either. I may get a smoker at some point, but at the moment, I do have a perfectly functional 2-burner gas grill. The good news is that you can indeed achieve a pretty decent barbecue with your grill, if you watch the temperature and keep up the smoke. It just takes a big more finagling and a lot more attention.
