 We recently discovered an amazing trattoria that specializes in truffles just outside of Gubbio that we have now visited a couple of times already. At this restaurant you can order an entire three course menu all featuring truffles that is simply amazing and one of my favorite items on their menu is this frittata with black truffles.  This past week we picked the last of the peaches off of our little trees and so I’ve been busy coming up with some new recipes to use them all up while they are at their peak of flavor. One of my favorite things to grill are chicken thighs as they stay moist and tender on the grill, are very versatile, and are inexpensive as well.  This summer is just flying by for me but I am trying to enjoy it as much as possible. Summer for me means lots of outdoor grilling as my kitchen here in Umbria gets very warm if I turn my oven on for any length of time, so I try and do any baking first thing in the morning, and we fire up the grill often to cook dinner.  This summer has been a scorcher so we’ve been cooking outdoors as much as possible. Unfortunately our Umbria farmhouse does not have air conditioning, so my kitchen can get really warm if I have the oven on for any length of time. When we fire up the grill to cook our meat or seafood entree, I always add a vegetable side dish or two that can be grilled as well to keep dinner preparation simple.
