 Another new year has once again arrived and although I am not usually one to look back, I decided that I wanted to do a short recap of 2011 and what it meant to me. 2011 was an eventful year for us, both good and bad, and I’m hoping that 2012 is a much better year for us all.  This is a traditional Tuscan dessert, that has become quite popular in many American Italian homes over the Christmas holidays. There are almost as many versions as there are cooks, but I like this simple version as it uses dark chocolate and does not use raw eggs.  This is healthy dip or spread recipe that I decided to try out over the holidays that highlights fennel. I wasn’t really sure how this dip would turn out as the ingredient list is pretty short and to be honest, although I love fennel, I wasn’t convinced that roasted fennel as the primary ingredient could carry add enough flavor to create a delicious dip.
