October has been a busy month here at Italian Food Forever as along with Italian American Heritage month it is also National Pasta Month! Now who doesn’t love pasta?  As our season here in Umbria comes to an end, the one activity we look forward to is our olive harvest. Harvesting and pressing your very own olives and turning it into extra virgin olive oil is extremely rewarding, and the nectar we are gifted is unbelievably delicious. If you can, visit an Italian specialty store, olive oil store, or even look online and buy even a small bottle of this year’s olive oil to try.  Umbria is a landlocked region, and because of that, meat, particularly pork, beef, and lamb, are extremely popular. Umbrians also eat a lot of game, including wild boar, pigeons, pheasant, rabbit and hare. I have to admit, that I have never been one to get very adventurous with game, and the few times I tried wild boar, known as cinghiale, in a restaurant I was not terribly impressed.
