I recently bought a new healthy recipe cookbook titled Mindful Eating written by a famous spa and resort located in the US, and ever since I saw that title I have been thinking about what mindful eating means to me. I am sure I am not wrong when I say that we all want to live a long, healthy life, and therefore we should put some effort each and every day to work towards that goal. Mindful eating is just one way we can help to accomplish that. Really, should we not pay attention (or be more... Read the whole entry »
I have been on a chickpea roll lately here in my farmhouse kitchen in Umbria. I have discovered the joys of cooking a big pot of dried chickpeas early in the week, and then I use them in everything from salads, in pasta dishes, or in soups like this one throughout the week. I call this my “summer” chickpea soup because although it is a hearty soup you might think would best be served in the fall, we serve it just barely warm in the summer, with just a drizzle of our own extra virgin... Salads like this one are very nutritious yet full of flavor and are great year round. Although I do prefer to cook my own dried chickpeas from scratch, you can use two cans of chickpeas drained and rinsed if you are tight for time. This salad can be adapted to meet your needs by adding chopped cucumber, peppers, or even a crumbling of feta cheese on top. This is a great salad to pack and take on picnics, or for potluck dinners as it travels well. I also make this salad as an addition to my... Read the whole entry »
I seem to be on a grilling trend lately now that the weather has warmed up, and one of my favorite things to grill are chicken thighs. I grew up thinking I was a white meat only girl, and never even gave chicken thighs or legs a chance until the past few years. I now prefer thighs over breast meat, and like the price even more! Best of all, thighs grill up beautifully, and never seem to dry out. I often just marinade the thighs with Italian seasonings, garlic, lemon and olive oil, and then... Read the whole entry »
I’ve been watching our garden since the minute we planted our veggies and was so happy to see the bright, vibrant yellow zucchini flowers that showed up last week. Zucchini flowers are light and delicate and really do not have a lot of flavor on their own, but are perfect to stuff, bread, or both stuff and dip into a batter and fry as in this recipe. This batter is so light and crisp that like potato chips, you’ll find you cannot eat just one, so make lots as they will go quickly. I... Read the whole entry »
With warmer weather now here, many of us are dining outdoors a lot more and firing up the grill for dinner. Nothing like grilled meat, poultry or seafood, but what to serve with your grilled entree? Vegetable salads are great side dishes for grilled seafood or meat and can be prepared ahead of time which is always helpful. I have always been a big fan of potato salad, and although I do like mayonnaise based versions as well, one of my favorite ways to make my potato salad is with an oil and... Read the whole entry »
