Announcing Our New Healthy Recipe Blog ~ Recipe Rebuild! It has taken over 6 months from the day we first started on this journey, but we are very pleased to announce the launch of our new healthy recipe blog. What began as a small seed of an idea late last year after I visited a number of nutrition message boards has now come into reality.
I was browsing different boards and I noticed many folks who were interested in eating healthier but were just not sure where to start. Many others were stating they needed to lose weight but that going on a "diet" (yes a 4 letter word) was just overwhelming and that they felt that by going on a restricted diet they would no longer be able to enjoy their family favorite recipes. I phoned up my daughter Christy that day, who just happens to be a registered dietitian, and asked what she thought about the two of us collaborating on a new blog to help folks make healthier nutrition choices. As well, I wanted a blog where folks could send us their family favorite recipes and we would "rebuild" them into a healthier version of that same recipe. I have been remaking recipes for many years by switching healthier ingredients for less healthy ones, decreasing fat in recipes without losing any of the flavor, and by enriching recipes by adding whole grains, nuts, and natural sweeteners. I love doing this, and consider it a challenge to turn a high calorie, fat laden traditional recipe into a healthier one without losing any of the flavor!

How To Make Biscotti Step by Step I've recently been unable to get into the kitchen like I've wanted to as I somehow managed to get my right index finger in the way of a very heavy antique door as it was being slammed shut. As you would imagine, my finger lost that fight, and I'm now in a cast with a pretty uncomfortable wound and fracture and cannot be too active until at least the wound heals. And wouldn't you know it but we are picking our olives next week! Oh well......Since my kitchen detail has been momentarily curtailed, I'm sharing a couple of the more popular past posts from IFF and hope you enjoy them. I will get back into the kitchen just as soon as possible, I promise!
Biscotti have taken the world by storm. These subtly sweet, crisp cookies can be found in different countries around the globe, although they can be traced back to Italy as far back as the fourteenth century. In fact it is said Christopher Columbus carried these cookies on his voyages because they were so sturdy, and their dryness prevented the problem of spoilage. The name biscotti can be translated as twice cooked which indeed describes how these tasty cookies are made.

Celebrating An Italian Thanksgiving Italians living in Italy do not celebrate Thanksgiving as we do here in North America although they do have many holidays called La Festa del Ringraziamento (or Festival of Thanks), which refer to a variety of religious holidays held throughout the year to honor patron saints. I believe the closest Italians (living in Italy) would get to celebrating a Thanksgiving as we know it, would be their harvest celebrations they hold throughout the fall. Italians that have emigrated to North America however, have certainly embraced Thanksgiving and in their own unique way made it their own. Italians love any holiday that brings together friends and family (and of course food!), and every family of Italian heritage has their own unique traditions that to celebrate this traditionally North American holiday. As well as the expected turkey and side dishes most Americans are familiar with, an Italian Thanksgiving here in North America will often also include an antipasti (or a few), a pasta or soup course, as well as many different traditional sweets to complete the meal.

One of my favorite things about fall is that I know that our local produce markets will be overflowing with seasonal, just picked apples of every color. Although the old saying "An apple a day keeps the doctor away" may be stretching things just a bit, apples are one healthy fruit option that are always easy to find, are relatively inexpensive, and are very easy to store. A a crisp sweet or tart apple is a satisfying snack that can be enjoyed anytime of the day and can be easily stored in lunches for the entire family. Most varieties of apples in the marketplace today are rich in vitamins A, B, and C, and also contain magnesium, iron, and manganese. Apples are also a fairly good source of fiber, particularly if you consume the skin along with the flesh.
